Abstract: The traditional method of preserving dates is the most distinguished means used by the Algerian population, especially in the south of Algeria, to produce a good number of food products. During the preparation of the Btana of the dates we add one or more aromatic grass according to the choice for purpose to decrease the load of microorganism improve the conservation. In this work, it was based on the study of the effectiveness of the aromatic "rosemary" plant on the traditional conservation of dates. The result obtained showed that the Btana container of the quantity of rosemary has a low microbial activity by cons of B'tana which does not add the rosemary there is strong microbial activity. Our advantage of rosemary helps to stabilize the pH to a less acidic degree.
