Abstract: Dans le Sahara algérien, le palmier dattier (Phoenix dactylifera L,) est le pilier des écosystèmes oasiens. Ses fruits appelés «dattes», riches en nutriments, sont considérés comme un aliment de grande importance pour les habitants oasiens. Les aliments glucidiques, les dattes en l’occurrence, étaient classées autrefois, selon la nature des sucres constitutifs : sucres simples et sucres complexes. Actuellement, une autre classification basée sur la capacité d’un aliment sucré à augmenter la glycémie est adoptée. Il s’agit de celle basée sur la valeur de l’index glycémique (IG).L’objectif de ce travail est de déterminer les teneurs en glucides de quelques cultivars de dattes de la région de Fenoughil à savoir : Adekli Kahla, Afkir Ali, et Bent E Dobba. Ceci permettra de les classer selon leur IG. Nos résultats ont révélé que les cultivars de dattes étudiés peuvent contenir jusqu’à 76,25 % de sucres totaux et jusqu’à 62,98 % de sucres réducteurs. La teneur la plus élevé en saccharose (15,05 %) enregistrée dans les dattes de cultivar Bent E Dobba est associée avec son index glycémique le plus élevé (76,37 %).Quant aux dattes du cultivar Adekli kahla et du cultivar Afkir Ali, elles sont classées parmi les aliments à « IG bas ».
In the Algerian Sahara, the date palm (Phoenix dactylifera L) is the mainstay of oasis ecosystems. Its fruits called "dates", rich in nutrients, are considered a food of great importance for the inhabitants of the oasis. Carbohydrate foods, dates in this case, were formerly classified according to the nature of the constituent sugars: simple sugars and complex sugars. Currently, another classification based on the ability of a sweet food to raise blood sugar is adopted. It is the one based on the value of the glycemic index (GI). The objective of this work is to determine the carbohydrate content of some date cultivars from the Fenoughil region, namely: Adekli Kahla, Afkir Ali and Bent E Dobba. This will allow them to be classified according to their GI. Our results revealed that the studied date cultivars can contain up to 76.25% total sugars and up to 62.98% reducing sugars. The highest sucrose content (15.05%) recorded in dates of the Bent E Dobba cultivar is associated with its highest glycemic index (76.37%). As for the dates of the Adekli kahla cultivar and the Afkir Ali cultivar, they are classified as “low GI” foods.
في الصحراء الجزائرية، يعتبر نخيل التمر (Phoenix dactylifera L) الدعامة الأساسية للنظم البيئية للواحات. وتعتبر ثمارها المسماة "التمر"، غنية بالعناصر الغذائية. كانت الاطعمة تُصنف سابقًا وفقًا لطبيعة السكريات المكونة: السكريات البسيطة والسكريات المعقدة. حاليًا ، تم اعتماد تصنيف آخر يعتمد على قدرة الطعام على رفع نسبة السكر في الدم. يعتمد هذا على قيمة المؤشر الجلايسيمي (GI) . الهدف من هذا العمل هو تحديد محتوى الكربوهيدرات لبعض أصناف التمر في منطقة فنوغيل ، وهي: أدكلي كحلة ، وأفكير علي ، وبنت ضبة. سيسمح ذلك بتصنيفهم حسب المؤشر الجلايسيمي الخاص بهم ، وقد أوضحت نتائجنا أن أصناف التمر المدروسة يمكن أن تحتوي على ما يصل إلى 76.25٪ سكريات كلية وما يصل إلى 62.98٪ سكريات مختزلة. ارتبط أعلى محتوى سكروز (15.05٪) في تمور صنف بنت ضبة بأعلى مؤشر نسبة السكر في الدم (76.37٪) ، أما تمور الصنف ادكلي كحلة وصنف افكير علي، فيصنفان على أنهما أطعمة ذات مؤشر سكري منخفض.
